"Ikinari" dumpling

This is one of the traditional Japanese sweets, especially in Kyushu area. Basically, the word "Ikinari" means "suddenly" in standard Japanese, while it has some other meanings in Kyushu dialects like "directly" or "roughly." So, there are a number of stories about the title... For example, it is named "ikinari" because we can make it in a short time by using uncooked sweet potatoes directly (=ikinari), or we can make it roughly, without any special cautions (=ikinari).

I'm not sure which story is true, but believe me, it's so nice for sure!

Ingredients

  1. 70 grice powder (glutinous)
  2. 50 gflour
  3. 1/3 tspsalt
  4. 75 gwater
  5. 120 gsweetened azuki red bean paste
  6. 1whole sweet potato

Steps

    Peel sweet potato's skin and cut it into 6 pieces. Soak them in some water for a while.

    Put rice powder, flour, salt and water into a bowl and mix them well till they become together. Adjust the dough with some water if it is too hard.

    Wrap it and rest it in a fridge for about 30 minutes or more.

    Divide the dough into 6 pieces. Flat each of them by hands to make a round sheet.

    Put azuki paste (1/6) and one piece of sweet potato on the developed dough and wrap them.

    Steam the dumplings for about 20 minutes till the potatoes are cooked.

    Wrap them with plastic films while they're still hot to keep their skin soft and moist.

It says " sweet potato " in the instructions but the one in the picture is white. The only sweet potatoes I know of are an orange ish color. I don't know there a different kind of sweet potato? Where can I find one?
