Ingredients

50 Minutes
  • For the dough
  • 4 cupsall-purpose flour
  • 1 tablespoonbaking powder
  • 1/2 teaspoonsalt
  • 1 tablespooncinnamon
  • 1 cup(about 9 oz) butter, at room temperature
  • 1 cupsugar
  • 2eggs
  • For the filling
  • 4large or 5 medium apples
  • 2 tablespoonsbutter
  • 3/4 cupsugar
  • 1 tablespooncinnamon
  • Juice and zest from 1 lemon
  • 1small cup brandy

    Prepare the filling: Peel and dice the apples.

  2. 2

    Heat the butter in a deep pan and sauté the apples for 5 minutes.

  3. 3

    Add the lemon juice and brandy, then add the sugar, lemon zest, cinnamon, and raisins. Cook until the apples are dry.

  4. 4

    Prepare the dough: In a bowl, mix the flour, baking powder, cinnamon, and salt.

  5. 5

    In another bowl, work the butter with the sugar using a spatula.

  6. 6

    Make a well in the flour mixture and add the eggs and butter mixture.

  7. 7

    Mix quickly with your fingers until the ingredients form a homogeneous mixture. Place the dough in the freezer for 10 minutes and preheat the oven to 340°F.

  8. 8

    Remove the dough from the freezer and divide it into two parts, one larger (about 2/3 of the total) and one smaller. Return the smaller part to the freezer.

    Grease the baking pan with a little butter. Roll out the dough and line the base and sides of the pan.

    Pour in the apple filling and spread it evenly.

  11. 11

    Finally, take the remaining dough from the freezer and grate it with your fingers or the coarse side of a grater over the apples to cover them.

    Bake the apple pie in the preheated oven for 45-50 minutes until golden brown.

  13. 13

    Once the apple pie cools, sprinkle with a little granulated sugar and cinnamon, cut into pieces, and serve.
