Cut the liver into small bites (a bit larger than a 2 euro coin) and the caul fat, respectively.

Thread alternating one piece of caul fat with one piece of liver on to the skewers, till you make your souvlaki.

When all the souvlakis are prepared, add your spices and grill!! Ready within minutes!
