Ingredients

  1. Lamb or goat offal (depending on the persons) 
  2. Intestines and tripe from one lamb (if you like you can also use the trotters which add to the taste) 
  3. 1 bunchdill 
  4. 1 bunchparsley
  5. 5-6spring onions
  6. 2-3fresh garlic 
  7. Salt - pepper 
  8. Enough oil for sautéing 
  9. 1 cupwhite wine 
  10. Lemon juice, depending on the quantity of the soup and the taste that you like

Steps

  1. 1

    After cleaning and washing the offal and intestines thoroughly, cut them into bites. 

  2. 2

    Sauté the offal and intestines and then add the herbs. 

  3. 3

    Sauté a bit more and deglaze with the wine. 

  4. 4

    Cover the ingredients with boiling water and let everything boil until tender.

  5. 5

    After the juices are absorbed and you see that the food is cooked, add as much lemon as you like. 

  6. 6

    Let the food boil a couple of minutes more and remove from heat. 

  7. 7

    You serve the soup while very hot.
