Steps

First make the dough for the filo.

Mix 3/4 of the flour with the salt, oil and vinegar.

Add water little by little and knead until the dough doesn't stick to your hands.

Divide the dough into three balls and keep them in a large bowl sprinkled with a little flour.

Place the spinach in a bowl and add the finely chopped onions, the dill (finely chopped as well), the feta cheese, the eggs, salt, pepper and the rice.

Rub all the ingredients with your hands so that the spinach sits.

Go back to your filo sheets, rolling out each one with the help of the rest of the flour and a rolling pin.

Brush your baking tray with oil and spread out one of the filo sheets making sure that there is some excess hanging over the sides so that you can fold it in the end.

Spread half of the filling and top with another filo sheet.

Spread the rest of the filling and finally, the last filo sheet.

Fold the edges inwards and score into pieces.

Brush the top with oil and bake for about an hour at 180°C.
