Steps

Make the paratha dough - 1 cup whole wheat flour, 1/4 cup water, 1/4 tsp salt, 1 tbsp oil. Mix it all together and keep it aside for 30 minutes.

Peel and slice potatoes and carrot.

Boil potatoes until well cooked. Strain and keep it aside.

In a pan, add a tablespoon oil, add cumin seeds, let it fry for a minute. Add chopped onions and green chili (optional).

Add tomato sauce (or chopped tomatoes), stir it well, add sliced carrot and corn. Let it cook for 3-5 minutes.

Add the coriander powder, salt, chili powder. Mix it well.

Add the boiled potatoes. Mix it well. Let it cook for another 5 minutes. Add chopped parsley/coriander. Keep it aside.

Divide the dough into 4 pieces and roll each pieces thin. Bake the roti in a pan for 3-4 minutes each side.

Place the cooked vegetables on the roti and add sliced cucumber (optional) in the middle.

Fold the bottom side up and fold the side, roll it and use toothpick to stick them together.

Continue with the rest.
