Ingredients

  • 5guajillo chiles
  • 1garlic clove
  • 3 1/2 tablespoonsachiote paste (about 50 grams)
  • Juice of 1 bitter orange
  • 1/4 cupapple cider vinegar (60 ml)
  • Salt
  • Black pepper
  • Oregano
  • 1pineapple
  • 3 1/2 ouncesbacon (about 100 grams)
  • 2 1/4 poundspork steak (about 1 kilogram)

Steps

  1. 1

    Blend the chiles, achiote paste, orange juice, vinegar, salt, pepper, oregano, and garlic until smooth.

  2. 2

    Coat the pork steaks with the marinade and let them rest for 3 hours.

  3. 3

    Peel and slice the pineapple.

  4. 4

    Thread the meat onto a skewer or wooden/metal stick, alternating 4 pork steaks, 2 slices of bacon, and a slice of pineapple. Repeat until all the meat is used.

  5. 5

    Bake at 450°F (230°C) for 30 minutes, then lower the temperature to 375°F (190°C) and bake for another 30 minutes.

  6. 6

    Remove from the oven and slice to serve.
