Delicious Balado Eggplant, a Family Favorite Recipe ^.^

It all started when my grandma often made balado eggplant for me, and I loved it (since I was still in school). Then I started asking for the recipe and tried making it myself. The sweet, tender eggplant combined with the delicious spicy balado sauce... it makes you want more and more. That's why when I'm on a diet, I deliberately don't cook this, afraid I'll indulge too much. Haha. The spices have been adapted to my own taste. Adding stinky beans is also yummy!

It all started when my grandma often made balado eggplant for me, and I loved it (since I was still in school). Then I started asking for the recipe and tried making it myself. The sweet, tender eggplant combined with the delicious spicy balado sauce... it makes you want more and more. That's why when I'm on a diet, I deliberately don't cook this, afraid I'll indulge too much. Haha. The spices have been adapted to my own taste. Adding stinky beans is also yummy!
Cooking Instructions

Cut the eggplants as you like. I prefer them a bit thin so they fry quickly and become tender, and the balado sauce absorbs more easily. Set aside.

Balado Sauce: Coarsely grind all the spices except the lemongrass (yesterday I blended everything because I was lazy and wanted it done quickly, feeling sorry for the kids). But honestly, cooking for too long is uncomfortable, feeling sorry for the kids in the room. (Hopefully, one day I'll have a kitchen in the middle of the room so I can watch the kids play, amen).

Heat the oil, add the lemongrass, then add the ground spices. Sauté until very fragrant. I use medium heat, then lower it. Add salt, flavor enhancer, and sugar until the taste is just right.

Once cooked and the taste is right, add the fried eggplant. Stir briefly. Remove and serve. Enjoy with hot white rice and crackers. Wow!

Tadaa... it's really easy, right? This balado recipe might be a little different from other balado recipes, but it's a family recipe. Feel free to modify it as you like.
