Ingredients

  1. 3 pcsEggplant
  2. 5 pcsChili
  3. 2 pcsBird's eye chili
  4. 6 pcsShallots
  5. 5 pcsGarlic
  6. 1 tspSalt
  7. 1/2 tspPepper
  8. 1/2 tspSugar
  9. 1 tspMushroom powder
  10. Keffir lime leaves 4pcs
  11. 1 pcsTomato

Cooking Instructions

    Cut the eggplant lengthwise, sear it with a little bit of oil until it's a bit tender. Set aside

  2. 2

    While the eggplant is cooking, in a food processor add chilies, garlic, shallots, and tomato. Blitz few times, until you got a rough chop consistency.

  3. 3

    Pre-heat pan, add oil, chili mixture, and keffir lime leaves to the pan, sauté few minutes until it fragrant.

  4. 4

    Once it's fragrant, add mushroom powder, then do a taste check and then add cooked eggplant, cook it for 10 minutes in medium low heat.

  5. 5

    Once it's done, serve it with warm rice!

  6. 6

    Tip : If you want the sambal to be a little saucy, you can add water to the sambal before you add the eggplant.
