Ebi (in Japanese 海 老/ebi means "shrimp"; closer is Hokkien: Hebi or Mandarin: Xiami; Hanzi Traditional :蝦米; Hanzi Simple :虾米) are small, dried shrimp and dried . Ebi is usually used as a spice in cooking Indonesian or Chinese - Indonesian cuisine.

In West Kalimantan, I encountered this dish when I was invited to a friend's birthday event. It was called a "salad", but the greens used were sweet potato leaves and kale. It combined other ingredients that enrich the flavor, especially really crunchy, raw eggplant. For the final touch, adding peanut sauce and dried shrimp is tasty... mmm YUMMY

  1. 100 grsweet potato greens, use leaves and boil
  2. 100 grkale, separate leaves from ribs then boiled
  3. 150 grcucumber, halved and thinly sliced in rounds
  4. 100 grcabbage, finely sliced
  5. 200 grpotatoes, peeled and cut into chunks and fried
  6. 100 grcassava crackers
  7. 2round eggplants, cut into pieces
  8. 1 blockfried tofu, cut into cubes
  9. 2 piecefried tempeh, cut into cubs
  10. 4eggs, boiled
  11. SAUCE
  12. 200 grpeanuts, fried/roasted
  13. 1 tspsalt
  14. 4 tspfine sugar
  15. 3 pcscurly red chili
  16. 2 pcsred chili (bird's eye)
  17. 2 Tbsptoasted ebi (small shrimp)
  18. 450 mlhot water
  19. 1 tbspvinegar

Cooking Instructions

    SAUCE : Mix peanuts, salt, sugar, and chilis. Blend until smooth, add the dried shrimp.

    Pour hot water and stir well. Add vinegar and stir.

    Place the sweet potato leaves, kale, cucumber, cabbage, potatoes, eggplant, on the base plate.

    Add the tofu, tempeh and eggs.

    Sprinkle seasoning and sprinkle on top cassava crackers and serve.
