Microwave lemon pudding
I haven't made this in a while so no photo but I hope to make it again soon! Such a simple recipe and a lovely dessert.

Combine the sugar, flour, eggs, butter and vanilla. Mix thoroughly.

Spoon the mixture into a large microwaveable bowl. Cover and cook for 3 1/2 minutes on full power.

Leave to stand for one minute.

While it's standing, heat the lemon curd for 30 seconds and then stir until smooth.

Turn the pudding out on to a plate, pour the curd over the top and serve with cream or ice cream!
