Ingredients

  • 100 gcaster sugar
  • 100 gsoft butter
  • 100 gself-raising flour
  • 2eggs
  • 1lemon (zested)
  • 1 tspvanilla extract
  • 4 tbsplemon curd
  • Cream to serve (or ice cream!)
  • 2 tbspjam or golden syrup (optional)

Steps

  1. 1

    Combine the sugar, flour, eggs, butter and vanilla. Mix thoroughly.

  2. 2

    Spoon the mixture into a large microwaveable bowl. Cover and cook for 3 1/2 minutes on full power.

  3. 3

    Leave to stand for one minute.

  4. 4

    While it's standing, heat the lemon curd for 30 seconds and then stir until smooth.

  5. 5

    Turn the pudding out on to a plate, pour the curd over the top and serve with cream or ice cream!
