The Puff of Cream Puff
Making cream puffs without cream!
Cooking Instructions

Pour the water, butter and sugar into a pot and cook them on a medium heat. Heat until the three ingredients are mixed or well combined.

Pour the flour into the pot and then mix the flour with the butter mixture. Mix them well until it turn into a paste, for about 2-3 minutes.

Transfer the mixture into a bowl to cool it slightly, for about 5 minutes.

Add 4 eggs [one at a time] into the mixture and mix until it forms a sticky dough and holds a peak.

Transfer the dough into a piping bag and then pipe out the dough into a lined parchment paper. After piping all the dough out into the parchment paper, using your wet finger, pat down the peaks of the dough and then brush the top of it a little bit of butter or margarine.

Bake them for about 20-25 minutes at 375°F/190°C.

Let it cool, serve and enjoy!

I made choux pastry for the first time in ages and it came out tasting really good. Adding almonds to the choux pastry makes it smell so amazing, I really love this recipe. (Makes 12-13 7cm cream puffs)Please get these in the oven as quickly as possible while it's still warm. This is a recipe I finally came up with after many repeated failures.In step 3 if you don't properly heat the flour it won't expand later!Adding milk gives the dough it's well-defined feel.If you don't put in the cream right before eating, then it'll become soft!When making these as a present, prepare the cream and the dough separately, and put the cream in right before eating.
