Fruit crumble is a great way to use up fruit that has seen better days. It works nice with any fruit (except, in my opinion, bananas) and you can also mix different types - adding a handful of frozen raspberries or blueberries gives it an extra zing, and plums work really well too. Preparation time is under 10 minutes, and the oven does the rest. Serve with custard, vanilla ice-cream, cream or natural yoghurt.

  1. 250 grflour
  2. 125 grbutter
  3. 1 tspground ginger
  4. 1/2 tspcinnamon (or 1 cinnamon stick)
  5. 1 pinchsalt
  6. 100 grbrown sugar (or honey)
  7. 4apples

    Get the ingredients together

    Grease the oven dish with some butter. Peel the apple and slice. Put the apple slices in the dish. Add the ginger and cinnamon - I put the stick in the middle with a layer of apple underneath and on top. Sprinkle with the juice of the lemon and add a generous spoonful of the sugar

    Put the flower, pinch of salt and butter in a large bowl.

    Wash and dry your hands really well. Then rub the butter into the flower like this, by gathering handfuls of the mixture and rubbing your hands together. The more you rub, the more the butter will be incorporated in to the flower and the end result

    will be a crumb-like mixture.

    Add the rest of the sugar. You can also add oats, seeds, muesli or granola too. Mix well.

    Cover the apples with the crumble mixture and put the oven dish into the oven at 180º for 60 minutes.

    When it is ready the top layer of the crumble will be hard and the apples will be soft and brown, because they will have absorbed the sugar while cooking. Enjoy!!

Born in the UK, I came to Spain after graduating many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. My recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal - I prefer buying fresh local produce as much as possible. When I have time, I love spending a few hours cooking, filling my kitchen with delicious smells and great music and then hosting family and friends for long happy meals, laughs, conversation and chilled white wine.
