Rinse the pork ribs and place them in a pot with 2 bowls (about 4 cups/950 ml) of water, 1 teaspoon salt, 1 tablespoon fish sauce, 1/2 teaspoon MSG, and chopped shallot. Simmer for about 10 minutes.

Peel all the vegetables, rinse, and cut them into pieces.

Add the beet, carrot, chayote, and potato to the pot in order. Season to taste. Add black pepper, green onions, and cilantro.
