Ingredients

  1. 1boneless skinless chicken breast
  2. 2 cupsroughly chopped spinach
  3. 1/2 cupsliced mushrooms
  4. 1 cuplargely diced mixed peppers
  5. 1/2 cupcherry tomatoes
  6. 1/4 cupgrated mozarella(optional)

Steps

  1. 1

    Cut pocket into chicken breast and stuff with half the mushrooms, tomatoes and peppers. You can add mozarella(optional). Season chicken with chicken spice and pepper. Secure with kebab sticks/toothpicks.

  2. 2

    Heat oil in a frying pan and sear chicken on medium heat for 5 minutes on each side.

  3. 3

    Transfer to oven pan, freshly squeeze lemon juice on the chicken and grill for 15 minutes at 180° along with remaining peppers, mushrooms and tomatoes.

  4. 4

    Steam spinach and season with pepper. Once chicken is done, serve with the grilled vegetables and spinach.
