Ingredients

4 servings
  1. 2 tbspolive oil
  2. 4 tbspbutter
  3. 2shallots, chopped
  4. 3garlic cloves, crushed
  5. 9 cupmixed mushrooms, thickly sliced
  6. 4 piecessun-dried tomatoes in oil, drained and chopped
  7. 6 tbspdry white wine, use one one that you would drink
  8. 7 ozcan pinto beans, drained
  9. 7 ozcan borlotti beans,drained
  10. 3 tbspfreshly grated Parmesan cheese
  11. 2 tbspchopped fresh parsley
  12. 1 pincheach off salt and freshly ground pepper
  13. 1freshly cooked pappardelle pasta to serve

Cooking Instructions

    Heat the oil and butter in a frying panand fry the shalotts until soft. Add the garlic and mushrooms to the pan and fry for 3-4 minutes. Stir in the sun-dried tomatoes, wine and seasoning to taste.

    Stir in the beans and cook for about 5-6 minutes, until most of the liquid has evaporated and the beans are warmed through. Stir in the Parmesan cheese. Sprinkle and serve immediately with the pasta.
