Dashimaki Tamago (Japanese rolled omelete)

Dashimaki Tamago is a very typical Japanese dish. Especially, it's often made for bento at home. The recipe is different from family to family. Some people don't add sugar; some people use mirin instead of sugar. Here is just one of the recipes. Actually, I sometimes leave out soy sauce, sugar, or even dashi (actually if you don't use dashi, it may be called Atsuyaki Tamago). Sometimes I may add extra sugar. It all depends on how I plan to serve the Dashimaki Tamago, or how I feel when I'm making it. So you can adjust this recipe to your taste!

Break the eggs in a bowl and beat them well.

Add dashi stock, sugar, soy sauce and salt to the beaten eggs, and mix well.

Heat the frying pan over medium heat, then grease with a little vegetable oil, ensuring the pan is well coated.

Pour in about one third of the egg mixture to the pan.

Spread the mixture over the pan and stir with chopsticks.

When the mixture is half done, roll it toward the front of the pan.

Slide roll to the opposite side of the pan, and grease empty space again.

Add a small portion of the egg mixture and spread it over the pan again. Repeat this process, making the roll bigger.

When the egg roll is done, cut it into pieces.
