Ingredients

  • 2 lbSquash
  • 1/2 cupmayonnaise
  • 2 tbspSugar
  • 1Salt & pepper to taste.
  • 1Beaten egg
  • 1 cupRitz crackers (crushed) if need to add more
  • 1/4 cupOnion(minced)

Steps

  1. 1

    Preheat oven to 400

  2. 2

    Cut squash, boil in water until tender.

  3. 3

    Drain off water. Place in a large bowl. Mash the squash. Then mix in all ingredients, but ritz crackers. Mix well.

  4. 4

    Place in a casserole pan, top with crushed ritz crackers. Bake for 30 minutes 400.

is this with summer squash aka yellow? i have 4 different kind of squashes that i need to cook up: acorn, butternut, yellow, and spaghetti
