Flavorful. Hard not to drink the vodka as you add it. Actually I guessed on the measurements, I kept on taking swigs :-[ you will be fine as long as you just reduce the alcohol and have at least equal portions of chicken stock.

1/2 cupHeavy cream
1/2 cupFresh basil, chopped

Steps

On medium heat, heat oil. Saute garlic and shallots.

Add vodka, let reduce to half. Add tomatoes, sugar and chicken stock. Bring to boil, add seafood then simmer.

Add cream, simmer for 1 minute, remove from heat. Add basil and salt and pepper to taste.
