Ingredients

  1. 1/3 cupfavorite salsa
  2. 1/4 cupchopped green onion
  3. 1/3 cupcherry tomatoes
  4. 1/2 cupkale
  5. 1/2 cupspinach
  6. 1 cupfirm tofu
  7. 1/4 cupavocado
  8. tofu seasoning
  9. 1 tbspnutritional yeast
  10. 1/2 tbspcumin
  11. 1/2 tbspfresh thyme
  12. 1 tbspminced garlic
  13. 2 tbspolive oil
  14. 1 cupwater
  15. 1/2 tbspdry basil

Steps

  1. 1

    Combine tofu seasoning ingredients and let marinate for up to 5 minutes.

  2. 2

    Heat olive oil in medium saucepan. Add spinach and Kale , sautee for 5 minutes.

  3. 3

    Add remaining veggies and tofu.

  4. 4

    Scramble until water is vaporized and tofu is browning on one side.

  5. 5

    Enjoy! Add and alter veggies and seasoning as desired. :)

Really good, I would say that this makes enough for 2 people with the kale and spinach kicked up a bit. Couscous would be really good with it though I did not do that.
