Grate the zucchinis and squeeze them in a kitchen towel to remove as much moisture as possible.

Finely chop the onion.

In a large bowl, mix all the ingredients. Add more flour if the mixture is too runny.

Heat oil in a skillet over high heat.

Spoon some of the mixture into the pan and cook for 3 minutes on each side until golden brown.

Let the fritters rest on paper towels after cooking.
