For marinated fried anchovies, it's best to buy larger anchovies, as the smaller ones aren't as flavorful. First, clean the anchovies by removing the heads and guts. You can also ask your fishmonger to clean them for you. If you do it yourself, grab the head and pull down to remove the guts, then rinse them well. Pat dry and season with salt.

Prepare the marinade: In a bowl, combine the vinegar, peeled garlic cloves sliced thin, paprika, and oregano. Mix well.

Place the anchovies in a dish and pour the marinade over them. Gently stir so the fish is well coated. Let them marinate for 1 to 1 1/2 hours to absorb the flavors. After marinating, drain well and coat each anchovy in flour.

Shake off any excess flour so there's just a thin layer. Group the anchovies in sets of three by their tails and fry in batches in plenty of hot oil so the oil doesn't cool down. Transfer to a plate lined with paper towels to absorb any excess oil. They're ready to serve.
