Ingredients

4 servings
  1. 8halved fresh, ripe sweetcorn. or 4 whole cobs
  2. 3/4 cupmelted butter
  3. 1 1/2 tbspolive oil
  4. 2large cloves garlic,crushed
  5. 100 gramshomemade white or wholemeal breadcrumbs
  6. 1/2 tbspdried parsley
  7. 1/2 tbspdried coriander
  8. 1 pincheach salt and cayenne pepper (though I do vary the herbs other than garlic occasionally,just for something different)

Cooking Instructions

    Pull husks and silks off the cobs, boil the corn in salted water until tender. Drain and cool.

    Melt the butter in a saucepan add the garlic, olive oil,salt and pepper. Pour into a shallow dish, put the breadcrumbs and herbs into another dish.

    Roll the cooled corn first in the melted garlic butter until well soaked, then roll in breadcrumbs until well coated.

    Cook in hot griddle pan, pan or on BBQ for ten minutes turning so you achieve a slightly charred golden crust.

I usually grill corn and then rub butter with garlic salt and pepper. this recipe is one step up from that. I love a great veggie recipe! thanks. :excited
