Baby'O is an almost mythical place in the nightlife of Acapulco, functioning as a disco and club with great music, and in the early morning, you can order an excellent chili con carne. I got the recipe with restaurant-sized quantities, but I prepared only a quarter of it. I recommend it to you.

Soak the beans overnight and cook them in a pressure cooker with 2 teaspoons of bouillon powder and a tablespoon of baking powder (like Royal)*. While they cook, prepare a sauté with everything else, frying the chopped onion, bell pepper, and adding the garlic.

Add the ground beef.

Add the tomatoes, ketchup, and seasonings.

Once the beans are cooked, add the sauté to let everything boil together. You can add a teaspoon of ground dried chili. It's delicious.

It's fantastic for parties; keep it warm in a Crock-pot, and in the early morning, there's nothing better than a bowl of chili con carne!

Tip: With the baking powder, the beans cook faster.
