Ingredients

6 servings
  1. 6 eachCorn Tortillas
  2. 1/2 cupOil
  3. 1 1/2 cupRefried Beans
  4. 1 1/2 cupCooked & Shredded Chicken
  5. 2/3 cupYour favorite barbecue sauce
  6. 1 cupShredded Cheddar Cheese
  7. 1 cupShredded Lettuce
  8. 1/2 cupDiced Tomatoes
  9. 1/3 cupDiced Scallions
  10. 2/3 cupSour cream
  11. 1Salsa or Hot Sauce (optional)

Steps

  1. 1

    Heat beans. Mix chicken with barbecue sauce.

  2. 2

    Fry tortillas in oil until crisp. Drain on paper towels.

  3. 3

    Build tostado in order: Spread 1/4 cup beans over tortilla, place 1/4 cup chicken over beans, sprinkle cheese, lettuce, tomato over chicken. Top with sour cream & a sprinkle of scallions.
