Ingredients

  1. 900 gramsripe tomatoes
  2. 5 tbspextra virgin olive oil
  3. 6bruised garlic cloves
  4. 1a dozen snipped fresh basil leaves
  5. 1salt and freshly ground black pepper

Steps

  1. 1

    Peel, seed and coarsely chop tomatoes.

    Put them in a large heavy- bottomed saute pan with olive oil, garlic, basil leaves, salt and pepper.

    Cook briskly for 20-30 minutes, stirring frequently, until a lot of the tomatoe water has evaporated.

    Remove and discard the garlic before serving.
