Great and easy recipe, recommend basting several times, so you can build up that wonderful marinade glaze! I will start experimenting with different wood smokes.

Great and easy recipe, recommend basting several times, so you can build up that wonderful marinade glaze! I will start experimenting with different wood smokes.
Cooking Instructions

place salmon skin down in shallow baking dish, making sure it can lay flat.

remove any bones
- 3
in a small bowl mix all ingredients of the marinade.
- 4
pour marinade over fish and let it sit in the refrigerator for 30 minutes.
- 5
turn the fish over so the skin is up, and refrigerate for another 30 min.

take the salmon out and brush with a little vegetable oil.

put on a medium hot grill Skin side up.

cook 4 to 5 min. to get nice grill marks.

if you , lift and turn 45° and grill for another 4 to 5 min.

fish is done when you can easily slide the fish off the skin.

when you flip the fish over the second time baste with a little of the marinade.

this can be served hot or cold!

At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight. There was an element missing, so I found some Greek yogurt in the fridge and added dill, but it was lacking. Tried salt and pepper. There was a definite improvement, but not quite there. A touch of horseradish sealed the deal. It made sense to use the, "tomato story," bowl I got at Daiso, a Japanese dollar store near my house. Pretty satisfied with the results overall. My friend Steve is a bourbon drinker so I wanted to make a dish he would like. It turned out great. Next time I may try adding some vegetables to make more like a traditional stir fry dish. But either way I think you will like the flavor. I used double the bourbon amount that most recipes call for but that allowed the bourbon taste to be the star. fenway -
