I knocked this together as a way to use up my leftover summer squash. I was shocked how good they were! You'd never tell what they are made of & it's a good way to sneak veggies to kids :)

I knocked this together as a way to use up my leftover summer squash. I was shocked how good they were! You'd never tell what they are made of & it's a good way to sneak veggies to kids :)

Ingredients

8 servings
  1. 4 cupAny varity of Squash. Cut into cubes.
  2. 2 cupFlour
  3. 1 cupSugar
  4. 1 tspBaking powder
  5. 1 1/2 tspcinnamon
  6. 1/2 tspginger
  7. 2eggs
  8. 1 tspVanilla Extract
  9. 1Oil to fry

Cooking Instructions

  1. 1

    Boil cubed Squash until soft (about 10 minutes)

  2. 2

    Blend/mash squash. Add eggs and vanilla.

  3. 3

    Mix wet ingredients with dry until a batter is formed. Add more flour if too wet or milk if too dry.

    Heat oil in frying pan. Drop by large spoonfuls into oil & fry on each side until golden (about 5-7 minutes).

    Yeilds 8-10 pancakes. Serve with natural yoghurt mixed with honey or maple syrup. Enjoy!
