I grew up in New England where toasted lobster and clam rolls were everywhere, we called them "boats" when we were kids and shrimp salad was another all time favorite to be a filling. Very simple, toasted seasoned hot dog rolls with a delicious simple fillimg!

Ingredients

  1. 1/2 lbsmall cooked shrimp
  2. 1/2 cupdiced celery
  3. 1 tbspchopped chives or minced onion
  4. 1 tspchopped parsley
  5. 1 tspfresh lemon juice
  6. 1/4 cupmayonnaise or to taste
  7. 6hotdog buns
  8. 1hot sauce to taste such as franks hot sauce or your favorite
  9. 1shredded lettece
  10. 1butter and garlic powder for toasting buns
  11. 1salt and black pepper to taste

    FOR BUNS

    butter sides of buns and sprinkle with garlic powder toast lightly in skillet

    combine shrimp with celery,chives,lemon,parsley,salt, pepper,hot sauce and mayonnaise

    line toasted rolls with shredded lettece add shrimp salad and serve!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.

These really turned out great. I topped them with fresh coleslaw instead of lettuce and served them with crab chips. Summer supper at its best.
