Ingredients

  1. 3egg plants
  2. 1onion, chopped
  3. 1green bell pepper
  4. 1tomato
  5. 1olive oil

Cooking Instructions

  1. 1

    Chop the 3 egg plants how ever you want them

  2. 2

    Chop the tomato how you want to

  3. 3

    Mince the onion

  4. 4

    Chop the green bell pepper however you want it

  5. 5

    In a frying pan heat the oil. When the oil is hot put in the chopped tomato then the onion and green bell pepper. Then put in the chopped egg plants ( the purple skin will turn brown when done).

  6. 6

    Serve over pasta or brown rice like I did.
