Cooking Instructions
- 1
Mix the milk and the water, and warm it a bit.
- 2
Add the yeast slowly while stirring the mixture.
- 3
Add the eggs to the mixture and mix it very well. Wait for five minutes after you are done.
- 4
Add the salt and dissolve the salt in the mixture.
- 5
Add the flour while stirring. You may need to add more flour and stir longer until the dough gets bouncy and stops sticking to your hand.
- 6
Put the dough in a container and cover the top (you can use a pot), and wait for 30 mins.
- 7
While waiting for the dough, fry the sesame in a pan in a mid-heat. No need to use oil in this step.
- 8
When dough is ready, cut pieces in the size of orange. Shape them like a cylinder and merge the ends to make a tire-like shape. It should be skinnier than bagel, please see the photo at the top for an example.
- 9
Mix molasses with 3/4 glass of water.
- 10
Using a brush, cover each pieces of dough with molasses sauce.
- 11
Put the sauced dough into sesame pan and flip the dough to make sure it is covered by sesame completely.
- 12
Preheat the oven to 400 for 12 mins.
- 13
Place the doughs to the oven tray as shown in the picture. Use aluminum foil.
- 14
Cook it for 20 mins in 400°F. Enjoy your simit.

I had a craving for Turkish bread called "Simit", so I baked a few.If you do not have grape juice, you could substitute it with honey diluted in lukewarm water. If possible, use "pekmez" (thick grape syrup) dissolved in water. These are bagels for sandwiches, which you won't tire of.If the dough is too firm at Step 3, let it rest a little bit longer, or allow the dough to rise for a longer time in Step 6. It will help the dough become chewy, but fluffy.Add 1 tablespoon of malt syrup when boiling the dough. When the bagels are baked, they will be nicely browned, flavourful, and lustrous. Soft Bagels Soft Bagels
I like chewy bagels, but I like soft and dense ones as well. These bagels can be used in many ways and are easy to eat. They're also good for sandwiches.Cover the dough with a damp cloth from the first rising to the shaping stage (Since the rising time is not very long, it is technically called “floor time”). Cloth is not needed during the second rising. For a smooth finish, remove the trapped air out of the dough really well before shaping the dough. Recipe by Masacchi cookpad.japan -
Simple Bagels Simple Bagels
I wanted to use all purpose flour to make bagels for sandwiches. I put this recipe together to use up some whole wheat flour and rye. It's also a reminder for me.I've adjusted the amount of water so that the dough is easy to knead. Hence, I don't think you'll have much trouble kneading it.You could either use fine or coarsely ground whole wheat and rye. Also adjust the time for rising to your preference. Millet Bagels Millet Bagels
There are lots of bagel recipes that contain cereal grains, but I hadn't seen one with millet. I love the appearance of the yellow millet, and the way the texture pops when I bite in is so much fun.You can omit Steps 3-5, and instead flatten the dough, punching a hole with your fingers and rotating to widen it as you might when making a doughnut. The millet may fall out of the dough when you are shaping it, so just press it back into the bagel after you are done shaping it, and it will stick in. I love my mother's bagels. I was taught to make these during a little visit. Please feel free to add any of your favorite flavourings. If the dough is too sticky in Step 4, there is not enough flour in the dough.Try adding your favorite flavorings to the dough. I think cinnamon, sesame, basil, or kuromame (black soy beans) are delicious. If you can't eat them hot out of the oven, wrap them in aluminum foil and heat them in an oven-toaster. For the finishing touch, draw back the foil and toast the top until it turns a lovely golden brown colour. Recipe by Makunouchi cookpad.japan
