Ingredients

  1. cakes
  2. 4 ozmargarine
  3. 4 ozcaster sugar
  4. 2 mediumeggs
  5. 6 ozself raising flour
  6. icing sugar
  7. 9 ozicing sugar
  8. 3 tbspcold water
  9. 1 tbspsugar strands

    Preheat the oven to 200°C

  2. 2

    Place 20 small baking cases onto two flat baking trays and put to one side for later

  3. 3

    In a large bowl, cream together the sugar and margarine with a wooden spoon until light and fluffy

  4. 4

    Crack the two eggs into a separate bowl and whisk together. Slowly beat this into the sugar/margarine mixture a little at a time

  5. 5

    Fold in the flour

  6. 6

    Place a heaped teaspoon of mixture into every baking case

  7. 7

    Bake in the oven for 15-20 mins then leave to cool

  8. 8

    To make the icing, sieve the icing sugar into a bowl and slowly add the water a little at a time until it becomes a smooth paste

  9. 9

    Once the cakes are cool put a little icing on the middle of each cake and sprinkle with sugar strands
