Ingredients

6 cupMashed potatoes (prepared with milk and butter)
1 cupricotta cheese
1/2 cupmilk
1 tsponion powder
2 tbspdry ranch dressing mix
1/2 lbbacon, cooked and crumbled
2 cupShredded Monterey Jack cheese
1 cupRitz crackers, crushed
1/4 cupbutter, melted

Cooking Instructions

In a large bowl combine potatoes, cottage cheese, milk, onion and dressing mix

Spread in a greased 13 by 9 inch pan. Top with bacon and cheese

Combine cracker crumbs in butter; sprinkle over top. Bake uncovered, at 350 for 35 to 40 minutes
