This is my homemade edition of cashew cookie from nakd bars (lara bars). With just 2 ingredients, it makes scrumptious gluten and dairy free bars.

This is my homemade edition of cashew cookie from nakd bars (lara bars). With just 2 ingredients, it makes scrumptious gluten and dairy free bars.
Cooking Instructions

Grind the cashews in a food processor until fine powder. Add the dates and continue to blend until smooth. Combine the mixture in a bowl and mix it using hands to form a sticky paste.

Line a food container or a baking tin with cling film and press the mixture evenly. Refrigerate it for 1-2 hours.

Cut into bars. Cover the bars with greaseproof paper or cling film and store in an airtight container for upto 1 week.

Doing a little preholiday baking today. I never even had these BEFORE I lost my cake privileges lol this is the ole 3 ingredient peanut butter cookies but I doubled it and used cashew butter instead. I also balanced out the sweet with some salt and put a copious amount of vanilla in as well. I like big food so I use a bigger scoop than my cookie scoop.
