Whenever I see the bananas in the fruit bowl getting brown spots I grab hold of this recipe. It also works fine with different dried fruits i.e apricots, raisins, sultanas. They are moist and make a perfect snack.

  • banana
  • 100 gramsbrown sugar
  • 300 gramsself raising flour
  • 1 tspmixed spice
  • 2large over ripe bananas
  • 160 gramsseeded chopped dates
  • 3eggs lightly beaten
  • 80 mlvegetable oil(I use olive oil)
  • 80 mlbuttermilk

    Grease 12 hole muffin pan

  2. 2

    Put dry ingredients into large bowl. Stir in remaining ingredients.

  3. 3

    Spoon mixture into prepared pan. Bake in moderately hot oven for 20 minutes.
