Ingredients

  1. 6 ozNonfat plain Greek yogurt
  2. 4 ozCucumbers (unpeeled), coarsest grated (about 1/2 cup)
  3. 1/2 cloveGarlic (crushed to a paste)
  4. 1 tspFresh Lemon Juice
  5. 1 lbLean ground beef (93% or 95% lean)
  6. 4 ozZucchini (finely diced, about 1 cup)
  7. 1/2 cupCrumbled reduced-fat feta cheese
  8. 1/3 cupRed Onion (finely diced)
  9. 1/2 tspDried marjoram
  10. 1/2 tspSalt
  11. 1/4 tspBlack Pepper (freshly ground)
  12. 1Vegetable oil cooking spray
  13. 7 ozRoasted red peppers (drained)
  14. 4Sourdough rolls, split
  15. 1Shredded Romaine
  16. 1Sliced Cucumber

Steps

  1. 1

    In a bowl, combine yogurt, cucumbers, garlic and juice. Set aside

  2. 2

    In another bowl, mix beef, zucchini, feta, onion, marjoram, salt and pepper.

  3. 3

    Form beef mixture into four 3/4 inch thick patties.

  4. 4

    Coat a grill pan or grill rack with cooking spray.

  5. 5

    Grill patties over medium-high heat, flipping once, about 5 minutes each side, until internal temperature reaches 160.

  6. 6

    Divide roasted peppers evenly among bottom roll halves

  7. 7

    Top with 1 burger, 1/4 yogurt sauce and lettuce and cucumber, if desired.

  8. 8

    Top each with other half of roll.
