Heat oil in a non stick pan.

Add chopped garlic and peppercorns.

Add mushrooms and sauté for a minute. Then add spinach and grated carrot and sauté for 2 more minutes.

Add salt and pepper, and few drops of more olive oil if needed.

Make kind of a hole in middle of sautéed spinach and break an egg without disturbing the yolk.

Cook for 2 minutes on low flame and season with salt and pepper powder.
