Ingredients

4 servings
  • 4red bell peppers
  • 1/3 cupcrumbled feta cheese
  • 1/3 cupchopped kalamata olives
  • 2 tbspextra virgin olive oil
  • 1 tbspolive brine from jar of olives
  • 1 1/2 tspdried oregano
  • 1fresh basil leaves to taste

Steps

  1. 1

    Char red peppers until blackened.

  2. 2

    Put in a bowl, cover, and let steam until cool, at least 15 minutes.

  3. 3

    Discard the skins and seeds and cut into 1 inch strips.

  4. 4

    Toss with feta cheese, olives, extra virgin olive oil, olive brine, and oregano.

  5. 5

    Scatter with basil leaves.

  6. 6

    *In order to char peppers, you can use a hot grill, gas burner, under the broiler method, or jarred ones that are already roasted.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
