Ingredients

  • 2 1/4 poundsfresh lamb
  • 1 poundfine bulgur
  • Salt
  • 1onion ground with several mint leaves, added to the meat when grinding
  • Kibbeh spices or kamouneh, which is a blend of spices including:
  • Ground cumin
  • Cinnamon
  • Dried basil
  • Hot red pepper
  • Rose buds
  • Marjoram
  • Olive oil for serving

Steps

    Wash the bulgur well and let it soak for a bit, then knead it well by hand until it becomes sticky.

  2. 2

    Add the finely ground meat and spices, and knead well to get a cohesive dough.

  3. 3

    Serve the kibbeh with olive oil on top and assorted vegetables like radishes and green onions.
