Ingredients

4 servings
  1. Bobs Baked Beans
  2. 250 gramsDried Beans
  3. 100 gramsStreaky Bacon or Italian Pancetta
  4. 1onion
  5. 2 cloveof garlic(finely diced)
  6. 250 gramsTinned tomatoes (or fresh if you have the patients to peel them)
  7. 25 gramsTomato Puree
  8. 25 mlYour favorite prepared hot sauce. I like Nandos Piri Piri. (But I just nuts) It mellows out with long slow cooking)
  9. 1Spice bag
  10. Spice Bag
  11. 1/4 tspCorriander seeds
  12. 1/4 tspCumin Seeds
  13. 1/4 tspFennel Seeds
  14. 1/4 tspCaraway Seeds
  15. 1/4 tspChili Flakes
  16. 1Star Anise
  17. 1Bay Leaf

Steps

  1. 1

    Soak the beans in a bowl of cold water for at least 8 hours (overnight is best)

  2. 2

    Rinse the beans and add to a pan of cold water with the spice bag. (do not add salt as it make the beans skin tough and unpalatable)

  3. 3

    Bring to the boil, skimming the foam of the top of the water as it comes to the boil

  4. 4

    Reduce the heat, cover the pan and simmer for 30 minutes.

  5. 5

    Drain the beans

  6. 6

    Slice the onion into rings

  7. 7

    In a bowl mix the tomatoes, hot sauce, tomato puree and Garlic

  8. 8

    You can add more of the hot sauce or the Spices (crushed) to the tomatoes, if you wish. It depends how Brave or Foolish you are.

    In a 1 litre casserole dish layer the ingredients as follows
    a.layer of tomato sauce
    b.onion rings
    c.bacon
    d.beans

  10. 10

    Continue layering until you have a final layer of tomato sauce.

  11. 11

    Cover the dish with a disk of greaseproof paper and place a lid on the dish.

  12. 12

    Place the casserole on the middle shelf of the oven at 110 ºC for 5 hours (low and Slow is the key)

  13. 13

    Great on toast or a side dish with Cottage pie
