Ingredients

  1. 1 1/2 cupmashed bananas
  2. 1 1/2 cupgrated carrots
  3. 1/2 cupchopped nuts (optional)
  4. dry
  5. 1 1/2 cupsugar
  6. 2 1/4 cupflour
  7. 3 tspbaking powder
  8. 3 tspcinnamon
  9. 1 1/2 tspbicarbonate soda
  10. wet
  11. 1 1/2 cupcooking oil
  12. 5eggs
  13. icing
  14. 100 gramssoftened butter
  15. 2 cupicing sugar
  16. 100 mlcream cheese (plain)
  17. 1 tspvanilla extract (or essence)
  18. 1carrots, lemon rind or chopped nuts for garnish
  19. tspvanilla essence

Steps

  1. 1

    Preheat oven 180°C. Cream eggs and sugar together

  2. 2

    Add oil, carrots, nuts, and bananas

  3. 3

    Add dry ingredients

  4. 4

    Pour into Prepared cake tins 20×20 for square or standard round cake tin. Don't over fill as it rises quite alot. Bake for 30 minutes or until centre is dry when you stick skewer in it

  5. 5

    For the icing...wait for the cake to cool down

  6. 6

    Cream together butter and sugar

  7. 7

    Add cream cheese and mix

  8. 8

    Add vanilla essence and mix

  9. 9

    Grate carrot and lemon rind or nuts to garnish
