Ingredients

  • 2 sticksunsalted butter, room temperature
  • 1 cupcreamy peanut butter
  • 3/4 cuplight brown sugar
  • 3/4 cupgranulated sugar
  • 2eggs
  • 2 teaspoonsvanilla extract
  • 2 cupsUnbleached all purpose flour
  • 1 teaspoonbaking soda
  • 1 teaspoonkosher aalt
  • 1 cupdried plums it cranberries, chopped
  • 1/2 cuppeanuts, copped

Steps

  1. 1

    Preheat oven to 325 f. With mixer beat butter until smooth, add peanut butter and both sugars beat until light 2 minutes.

    Add eggs and vanilla beat until combined

    Whisk together flour, baking soda, and salt. Add this mixture to peanut butter mixture.

    Chop dried cherries or plumbs and peanuts, add to the mixture. Stir.

    Scoop heaping table spoon balls onto baking sheets. Leave 3 inches apart.

    Cook about 18-20 mins. Until edges get colors. Be careful, Cookies still hot and can break easily, let them cool. You will get 5 dozen of cookies. I used half of the ingredient made up 16 cookies

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
