Mix the ground beef with the spices, cilantro, onion, and rice. Shape into small balls and refrigerate.

Bring the water to a boil. Add the tomatoes, celery, onion, meatballs, and carrots. Remove the tomatoes and onion, blend them well, then strain and return to the broth.

Add the potatoes and wait for the soup to boil again. Season with more spices if needed. Add the zucchini last, since it cooks quickly, along with a few sprigs of cilantro. Cover and turn off the heat.

Serve in a deep bowl with some cooked rice and the soup. Enjoy! For a spicy touch, you can add chipotle, chiltepin chili, and a few drops of lime juice.
