Ingredients

  1. 250 gramspkt choc ripple biscuits
  2. 80 gramsbutter - melted
  3. 1 tbspvanilla sugar
  4. 1/4 cupboiling water
  5. 3 tspgelatine powder
  6. 500 gramscream cheese - softened
  7. 1/2 cupcaster sugar
  8. 200 mlthickened cream
  9. 4mars bars - finely chopped.
  10. 60 gramsmilk chocolate - chopped
  11. 2 tbspthickened cream
  12. 1 tbspbrown sugar
  13. 20 gramsbutter
  14. 2 tbspthickened cream .
  15. 1mars bar for garnish - finely chopped

Cooking Instructions

    Process biscuits until fine crumbs .

    Add the 80g of butter and vanilla sugar and process till combined .

    press the biscuit mixture over the base and half way up the sides of a 22cm round springform pan then refrigerate for at least 30 minutes to set .

    Place boiling water into a heatproof jug and sprinkle over gelatine and whisk with a fork until dissolved , set aside to cool .

    Using an electric mixer beat the cream cheese and the half cup caster sugar together until light and fluffy then gradually beat in gelatine and then the cream , beat until combined . then fold in the chopped up mars bars to the cheese mix .

    To make the chocolate sauce : place the chocolate and 2 tablespoons of the cream in a heatproof bowl and melt the chocolate until smooth , either in the microwave or over a pot of simmering water .

    To make the butter scotch sauce : place the brown sugar , 20g of butter and 2 tablespoons of cream into a small saucepan and stir on low heat , without boiling , until the sugar has dissolved .

    pour half the cream cheese mixture over the prepared biscuit base then drizzle half the chocolate sauce over followed by the butter scotch sauce and run a knife or skewer through the mixture to create a marble effect then top with remaining cream cheese mixture and chocolate sauce and butter scotch sauce and run knife or skewer through again to create a marble effect on top .

    refrigeratorate over night or until set . enjoy . :-) .
