I like enchiladas but Dont really like tortillas so I came up with this simple version without the tortillas and cheese. Its really simple and you can always add your twist to it. So good I made it two nights in a row.

I like enchiladas but Dont really like tortillas so I came up with this simple version without the tortillas and cheese. Its really simple and you can always add your twist to it. So good I made it two nights in a row.

Ingredients

  1. 2 canEnchilada Sauce ( small your choice on brand and heat preference)
  2. 5 lbBag of chicken parts (I used Leg Quarters)
  3. 1 largeRed Onion
  4. 2Green Peppers
  5. 1oregano, paprika, salt, chicken seasoning, chilli powder, and garlic powder

Cooking Instructions

    After washing chicken, place chicken in a large baking dish. Coat chicken with all herbs and spices until fully coated.

    Pour enchilada sauce over chicken. Slice Peppers and Onions length wise. Place on top of chicken.

  3. 3

    Bake at 350°F for 1hour or until chicken is falling of the bone.
