Ingredients

  • 1/2 lb93 lean ground beef
  • 1 packagesau gratin potatoes
  • 2/3 cupalmond milk (or any other milk)
  • 1/2avacado (substituted for butter)
  • 1/2 cupcrushed tortilla chips
  • 1green pepper
  • 1/2 cupshredded cheese (I use taco flavor)

Steps

    Boil 2 and 1/4 cup water with almond milk and mushed avacado

  2. 2

    Add potatoes from box and sauce packet stirring frequently

  3. 3

    Brown beef

  4. 4

    Sautee green peppers with coconut oil, butter, or water if you prefer them not crispy

  6. 6

    Combine potatoes, sauteed peppers, and beef together in one bowl

  7. 7

    Bake at 400° for 20 minutes

  8. 8

    After 20 minutes, add crushed tortilla chips and shredded cheese as a topper and bake for an additional 10-15 minutes or until cheese is melted

  9. 9

    Let it cool and serve!

I've made something similar to this.. but instead of au gratin potatoes. .I cooked the hamburger and added diced potatoes and peas.. its pretty good..
