Besan khoya barfi

Besan khoya barfi is popular sweet of North India. Besan barfi making is a tradition in our family during the festivals every year. The uniqueness about this barfi is that my mother made this barfi with khoya & Besan. To continue this tradition in festivals I always make this.

Steps

In a kadhai heat Ghee. Let it melt. add besan. Saute Besan in Ghee. Add Suji. Roast both in slow flame with continuous stirring until it becomes light brown, aromatic and ghee starts to separates. Sprinkle 1 tsp water. Water crumbles Besan. Roast for 2-3 minutes switch off flame and allow besan to cool a bit.

While besan getting cool, in a kadhai roast khoya for 2-3 mins or until it gets loosen up, Now add besan with khoya mixture. continuously stir until Besan & khoya mixture leaves side of Kadhai and not sticky. Then turn off the gas.

Cool the mixture on room temperature. Now add Powdered sugar. Mix properly.

Grease a plate with little Ghee. and transfer barfi mixture, level it up even with spatula or large knife. Sprinkle green cardamom, nutmeg powder, coconut powder. Garnish with dry fruits.

Press with fingers. Cut in to square pieces.
