Ingredients

4 servings
  1. 1 can(14 ounces) chicken broth (you can use fat free if you prefer), or 1 3/4 cups homemade chicken stock
  2. 1 can(4 ounces) diced green chiles, do NOT drain
  3. 1/2 cupquick cooking (not instant) grits
  4. 3/4 cup(4 ounces) shredded cheddar cheese
  5. 1/2 cupwater

  1. 1

    Combine the broth and 1/2 cup water in a 2 quart or larger saucepan (preferably nonstick) and bring to a boil.

  2. 2

    Then reduce the heat to low, cover the pan, and simmer, stirring occasionally, until the grits are tender and thick, about 10 minutes.

  3. 3

    Stir from the bottom of the pan to make sure the grits aren't sticking.

  4. 4

    Remove the pan from the heat.

  5. 5

    Stir in the cheese and the green chiles with their juice.

  6. 6

    Serve immediately.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
