Pat dry the liver with a kitchen towel and make a slit on the side of the liver remove the outer membrane of the liver which tends to be chewy.

After removing the membrane cut the liver into even size cubes and season with salt and black pepper.

In a hot pan saute the onions minced garlic and chopped chillies for about 5 mins then add the seasoned liver and cook the liver for 2 mins until golden brown underneath increase the heat and cook the liver for another 3-4 mins or until the liver is done and not overcooked.

Heat 2 tablespoon of cooking oil in a pan and saute the onions until translucent in color add the chopped tomatoes.cook the mixture until the tomatoes are pulp in texture then add the blanched spinach.

Transfer the cooked liver into a plate and serve with sauteed spinach and ugali.
