Ingredients

1 serving
  1. 1/3 loafof Cuban style bread
  2. 4 ozbacon , 4 slices
  3. 3 largeeggs
  4. 1/2 cupcoarsely shredded mild cheddar cheese
  5. 2 tbspfinely shredded mild cheddar cheese
  6. 2 tbspbutter or margarine

Cooking Instructions

    Get a skillet or pan turn the heat on immediately add the bacon to pan. This will allow the bacon not to curl up as much

  2. 2

    Turn as needed when done add to a paper towel to absorb excessive oil.

    Drain you bacon drippings in to a heat resistant container. Turn off the heat. Split your bread lengthwise in half and put margarine or butter on the sandwich cut sides.

    Put the pan on to heat, still should be hot, add your bread buttered side down let it fry crispy. Just don't let it burn. Turn your bread and crisp the outside just a bit.

    Remove bread to a plate add the coarsely shredded cheese covering the bottom well and the little bit left add to top of bread.

    Add bacon over the bottom part of bread that has the most cheese

    Remove from heat add bacon drippings back to pan. Crack and beat your eggs heat the pan add the beaten eggs.

    Pour your eggs into skillet, pan, and let eggs cook about 30 seconds the should be turning solid now stir a bit turning to keep eggs solid but cooking.

    This will allow your eggs to stay on the sandwich while eating it. its a solid fry not the crumbly fry of eggs
